I just made this for lunch today and I thought I would share since we are all going to be CLEANING up at Randall's with our $0.67 Kraft cheese! I have been a big fan of making my own mac & cheese (as opposed to boxed) ever since I saw it on Rachael Ray 2 years ago. My daughter, Addison, LOVES this, and I LOVE that I can pronounce all of the ingredients in it! =-) I usually use elbow macaroni but I didn't have any so we substituted penne. I will outline how I made this but we don't have any measuring cups (seriously, ask Melissa! lol) so I am just estimating on the measurements. I like recipies that are not specific, but instead an idea or process to follow. If you are not that type of person, google some recipies!
Ingredients:
1. Barilla Whole Grain Pasta $0.45
2. Kraft Cheddar Cheese $0.67
3. Butter or margarine $0.20
4. Flour approx $0.10 worth
5. Milk approx $0.10 worth
Directions:
1. Fill large pot with water, add salt if you like cover and bring to a boil.

b. unload the dishwasher
c. set out serving plates

2. Once water is boiling this will only take about 10 minutes to prepare! Add pasta, bring back to a boil for 10 minutes stirring occasionally.
3. In another saucepan, melt a few tablespoons of butter (3-5T)
4. Sprinkle in some flour (2-3T)
5. Stir consistently until incorporated (1-2 minutes)
6. Slowly pour in a cup or two of milk and never stop stirring it slowly until milk is bubbling and beginning to thicken (3-5 minutes)
7. Take a break from the roux and stir up the boiling pasta
8. Pour in a whole bag of cheese and continue to stir slowly until nice and creamy (2-3 minutes)
9. Now your pasta should be done, drain well and return it to the pot
10. Pour in cheese sauce, stir and ENJOY!!
This makes about 7 servings, and when I make it for the kids and I, we always have a ton left over. I usually freeze some of the leftovers in empty butter or sour cream containers so I have a quick meal for the kids when I'm in a jam. You can really play with this recipe, add peas, salt, pepper, paprika, garlic, whatever you like. This is simply the base. I hope someone enjoys this!
